Route suggestions from Southeastern riders

Well, I found an '06 Tiger in Charlotte, sold my '00, and now comes the planning of the route to bring it back to Texas.  I'll be in Columbia, SC on business the end of this month, so I'll just fly in for that then ride home starting August 1st.  

Can any of you guys from that part of the country suggest any good sections that I shouldn't miss, or those that I should avoid?  I'd like to stay completely off the interstates, go through the Smokies, etc., and camp at least a couple of nights.  I've only got 4, maybe 5 days before I need to be back, but that could be subject to change if the grin factor is high.
